Ingredients

The salad

  • 2 cups fresh arugula
  • 2-3 pieces campari or cocktail style tomatoes, sliced
  • ½ piece avocado, pitted and sliced
  • 3 slices fresh mozzarella cheese
  • fresh leaves basil

The dressing

  • 1 tablespoon extra virgin olive oil
  • 1 ½ teaspoons balsamic vinegar
  • generous pinch sugar or dollop of honey
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Assemble the arugula, tomato, avocado slices, and mozzarella in a serving bowl.
  2. Top with torn or slivered basil leaves.
  3. Whisk the olive oil, balsamic vinegar, sugar or honey, and season with salt and pepper.
  4. Pour the dressing over the salad, toss to coat, and serve.
