Ingredients

The salad

  • 1 cup hulled and sliced strawberries
  • 1 cup grape or cherry tomatoes, halved
  • 1 medium ripe avocado, pitted and diced
  • cup loosely packed basil leaves, chiffonade cut
  • 1 ½ teaspoons extra-virgin olive oil
  • to taste Pink Himalayan salt or fine sea salt
  • to taste freshly ground black pepper
  • for serving toasted sesame seeds or chopped pecans

The balsamic reduction

  • cup balsamic vinegar

Instructions

  1. Simmer balsamic vinegar in a small saucepan over medium heat until it thickens and reduces by half.
  2. In a large shallow bowl, combine strawberries, tomatoes, avocado, and basil.
  3. Drizzle olive oil over the salad and gently toss to coat.
  4. Season with salt and pepper, then toss briefly again.
  5. Top with toasted seeds or nuts and drizzle with balsamic reduction.
  6. Serve immediately, best enjoyed fresh.
