Chicken Caprese Salad

Ingredients

The Chicken Marinade

  • 2 tbsp Balsamic vinegar
  • 1 tbsp Olive oil
  • ½ tsp Garlic powder
  • 1 tsp Dried basil
  • ½ tsp Dried oregano
  • 1 tsp Sea salt
  • ¼ tsp Black pepper
  • 4 8-oz Boneless skinless chicken breasts

The Salad

  • 5 cups Romaine lettuce (chopped)
  • 1 cup Cherry tomatoes (halved)
  • ½ cup Fresh mozzarella balls
  • ¼ cup Fresh basil (cut into ribbons)
  • ¼ cup Balsamic glaze

Instructions

  1. Whisk together the marinade ingredients in a bowl and coat the chicken breasts, marinating for at least 10 minutes.
  2. Cook the chicken using your preferred method until fully cooked, then let it rest for 5 minutes before slicing.
  3. If making homemade balsamic glaze, prepare it separately.
  4. In a salad bowl, combine the lettuce, tomatoes, mozzarella balls, and sliced chicken.
  5. Garnish with basil leaves and drizzle with balsamic glaze.
