Ingredients

The chicken

  • 4 medium Boneless skinless chicken breasts
  • 2 tbsp Olive oil
  • 1 tsp Sea salt
  • ¼ tsp Black pepper

The toppings

  • 4 oz Fresh mozzarella cheese (sliced)
  • 2 medium Roma tomatoes (sliced thinly)
  • 2 tbsp Balsamic glaze
  • ½ cup Fresh basil (cut into ribbons)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Place chicken breasts in a baking dish, brush with olive oil, and season with salt and pepper.
  3. Bake for about 20 minutes until the internal temperature reaches 150°F (65°C).
  4. Top the chicken with mozzarella and tomato slices, then bake for an additional 5-10 minutes until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes, then drizzle with balsamic glaze and top with fresh basil.
