Instructions
- Heat olive oil in a skillet over medium-high heat and cook the chicken for 3-4 minutes on each side until fully cooked.
- Remove the chicken and set aside.
- In a saucepan, heat balsamic vinegar until boiling, then reduce heat and simmer until reduced by half.
- Plate the chicken and top with sliced tomatoes, mozzarella, and basil.
- Drizzle with the balsamic reduction and serve warm.
