Ingredients

The chicken

  • 2 Tbsp. olive oil
  • 2 pieces boneless, skinless chicken breasts

The balsamic reduction

  • ½ cup good-quality balsamic vinegar

The toppings

  • 2 cups grape or cherry tomatoes
  • 1 cup fresh mozzarella
  • 1 cup fresh basil

Instructions

  1. Heat olive oil in a skillet over medium-high heat and cook the chicken for 3-4 minutes on each side until fully cooked.
  2. Remove the chicken and set aside.
  3. In a saucepan, heat balsamic vinegar until boiling, then reduce heat and simmer until reduced by half.
  4. Plate the chicken and top with sliced tomatoes, mozzarella, and basil.
  5. Drizzle with the balsamic reduction and serve warm.
