Balsamic Glazed Caprese Chicken

Ingredients

  • 3 lbs. boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • salt & pepper to taste for seasoning
  • 2 cloves garlic, minced
  • cup minced red onion
  • ½ cup balsamic vinegar
  • 1 tablespoon coarse mustard
  • 1 tablespoon honey
  • 8 oz. fresh mozzarella, cut into 6 slices
  • 1 cup halved cherry tomatoes
  • cup fresh sliced basil

Instructions

  1. 1. Season the chicken thighs with salt and pepper.
  2. 2. Heat a skillet over medium-high heat and add olive oil and chicken.
  3. 3. Cook the chicken for 5-8 minutes on each side until cooked through.
  4. 4. Remove the chicken from the pan.
  5. 5. Sauté garlic and onions in the same pan until translucent.
  6. 6. Add balsamic vinegar, mustard, and honey; stir and simmer for 3-4 minutes.
  7. 7. Return the chicken to the pan and top each piece with mozzarella.
  8. 8. Cover and cook on low until the cheese melts, about 3-5 minutes.
  9. 9. Top with tomatoes and fresh basil before serving.
