Balsamic Glazed Caprese Chicken

Instructions
- 1. Season the chicken thighs with salt and pepper.
- 2. Heat a skillet over medium-high heat and add olive oil and chicken.
- 3. Cook the chicken for 5-8 minutes on each side until cooked through.
- 4. Remove the chicken from the pan.
- 5. Sauté garlic and onions in the same pan until translucent.
- 6. Add balsamic vinegar, mustard, and honey; stir and simmer for 3-4 minutes.
- 7. Return the chicken to the pan and top each piece with mozzarella.
- 8. Cover and cook on low until the cheese melts, about 3-5 minutes.
- 9. Top with tomatoes and fresh basil before serving.
