Easy Grilled Balsamic Caprese Chicken

Instructions
- Prepare the marinade by whisking together balsamic vinegar, olive oil, dijon mustard, honey, minced garlic, and salt.
- Reserve half of the marinade for later use.
- Marinate the chicken breasts in the remaining marinade for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Clean the grill grates and oil them to prevent sticking.
- Grill the marinated chicken for 4-5 minutes on one side, then flip and grill for another 4 minutes.
- Baste the chicken with the reserved marinade, then top each piece with mozzarella and tomato.
- Close the grill and cook for an additional 1-2 minutes until the cheese melts.
- Remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with fresh basil and serve.
