Easy Grilled Balsamic Caprese Chicken

Ingredients

The chicken and marinade

  • 4 pieces boneless skinless chicken breasts
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • to taste salt

The toppings

  • 4 oz. fresh mozzarella, sliced
  • 1 piece vine ripe tomato, sliced
  • ΒΌ cup fresh basil, chiffoned

Instructions

  1. Prepare the marinade by whisking together balsamic vinegar, olive oil, dijon mustard, honey, minced garlic, and salt.
  2. Reserve half of the marinade for later use.
  3. Marinate the chicken breasts in the remaining marinade for at least 15 minutes.
  4. Preheat the grill to medium-high heat.
  5. Clean the grill grates and oil them to prevent sticking.
  6. Grill the marinated chicken for 4-5 minutes on one side, then flip and grill for another 4 minutes.
  7. Baste the chicken with the reserved marinade, then top each piece with mozzarella and tomato.
  8. Close the grill and cook for an additional 1-2 minutes until the cheese melts.
  9. Remove the chicken from the grill and let it rest for 5 minutes.
  10. Garnish with fresh basil and serve.
