Grilled Chicken Caprese

Ingredients

The chicken

  • 4–6 ounces Chicken Breasts
  • 1 tablespoon olive oil
  • ¾–1 teaspoon salt
  • ¾ teaspoon pepper
  • 1 teaspoon granulated garlic powder
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh thyme
  • 6 ounces fresh mozzarella cheese

The tomato salad

  • pints cherry or grape tomatoes
  • 15 leaves fresh basil
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Optional Garnish

  • to taste Balsamic Glaze
  • to taste Basil Pesto

Instructions

  1. Preheat the grill to medium-high heat.
  2. Pound the chicken breasts to an even thickness of about ¾ inch.
  3. Drizzle olive oil over the chicken and season with salt, pepper, garlic powder, lemon zest, and thyme.
  4. Grill the chicken, checking for grill marks after 5-6 minutes, then flip and grill for another 5-6 minutes until cooked through.
  5. While the chicken is grilling, prepare the tomato salad by combining tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper in a bowl.
  6. Once the chicken is nearly done, place a slice of mozzarella on each piece and cover the grill until melted.
  7. Serve the chicken on a platter, topped with the tomato salad and optional garnishes.
