Instructions
- Preheat the grill to medium-high heat.
- Pound the chicken breasts to an even thickness of about ¾ inch.
- Drizzle olive oil over the chicken and season with salt, pepper, garlic powder, lemon zest, and thyme.
- Grill the chicken, checking for grill marks after 5-6 minutes, then flip and grill for another 5-6 minutes until cooked through.
- While the chicken is grilling, prepare the tomato salad by combining tomatoes, basil, garlic, olive oil, balsamic vinegar, salt, and pepper in a bowl.
- Once the chicken is nearly done, place a slice of mozzarella on each piece and cover the grill until melted.
- Serve the chicken on a platter, topped with the tomato salad and optional garnishes.
