Chicken Caprese Skewers

Instructions
- Soak wooden skewers in water for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread chicken and tomatoes onto skewers, brushing with olive oil and seasoning with salt and pepper.
- Grill the skewers for about 4 to 6 minutes per side until the chicken is fully cooked.
- While grilling, prepare the pesto by pulsing basil, parmesan, pine nuts, and garlic in a food processor, then slowly add olive oil.
- Once cooked, remove skewers from the grill, add mozzarella balls to each end, and serve with pesto and balsamic glaze.
