Chicken Caprese Skewers

Ingredients

The skewers

  • 1 3/4 lbs boneless skinless chicken breasts
  • 1 lb grape tomatoes
  • 1 Tbsp olive oil
  • 8 oz mozzarella balls
  • to taste salt
  • to taste black pepper
  • 3 Tbsp balsamic glaze

The pesto

  • 2 cups fresh basil leaves
  • 3 Tbsp parmesan cheese
  • 2 Tbsp pine nuts or walnuts
  • 1 large clove garlic
  • 1/3 cup olive oil

Instructions

  1. Soak wooden skewers in water for at least 1 hour.
  2. Preheat the grill to medium-high heat.
  3. Thread chicken and tomatoes onto skewers, brushing with olive oil and seasoning with salt and pepper.
  4. Grill the skewers for about 4 to 6 minutes per side until the chicken is fully cooked.
  5. While grilling, prepare the pesto by pulsing basil, parmesan, pine nuts, and garlic in a food processor, then slowly add olive oil.
  6. Once cooked, remove skewers from the grill, add mozzarella balls to each end, and serve with pesto and balsamic glaze.
