Grilled Chicken Caprese Sandwich

The Chicken

The Bread

10 ounce loaf
sourdough bread (preferably rosemary flavored), cut in half lengthwise
The Toppings

8 ounce log
fresh mozzarella cheese, sliced into ¼ inch rounds

campari tomatoes (about 11 ounces)

fresh basil leaves

balsamic vinegar or balsamic glaze
Instructions
- 1. Mix olive oil, parsley, lemon juice, salt, and pepper in a bowl and coat the chicken breasts, letting them marinate at room temperature.
- 2. Preheat the grill or grill pan to high heat.
- 3. Discard the marinade, season the chicken with salt and pepper, and grill for about 3-4 minutes on each side until grill marks form and the internal temperature reaches 185°F.
- 4. While the chicken cooks, drizzle olive oil on the cut sides of the bread and grill until lightly browned.
- 5. Slice the cooked chicken and set aside.
- 6. Cut the grilled bread into slices, layer with chicken, mozzarella, tomato slices, drizzle with olive oil and balsamic, and top with basil leaves.
- 7. Season with additional salt and pepper and serve.
