Grilled Chicken Caprese Sandwich

Ingredients

The Chicken

  • 2 pieces skinless boneless chicken breasts
  • ½ tablespoon extra virgin olive oil
  • 1 teaspoon fresh parsley, minced
  • ½ lemon juiced
  • to taste kosher salt and freshly ground black pepper

The Bread

  • 1 10 ounce loaf sourdough bread (preferably rosemary flavored), cut in half lengthwise

The Toppings

  • 1 8 ounce log fresh mozzarella cheese, sliced into ¼ inch rounds
  • 10-12 medium campari tomatoes (about 11 ounces)
  • ¼ cup fresh basil leaves
  • to taste balsamic vinegar or balsamic glaze

Instructions

  1. 1. Mix olive oil, parsley, lemon juice, salt, and pepper in a bowl and coat the chicken breasts, letting them marinate at room temperature.
  2. 2. Preheat the grill or grill pan to high heat.
  3. 3. Discard the marinade, season the chicken with salt and pepper, and grill for about 3-4 minutes on each side until grill marks form and the internal temperature reaches 185°F.
  4. 4. While the chicken cooks, drizzle olive oil on the cut sides of the bread and grill until lightly browned.
  5. 5. Slice the cooked chicken and set aside.
  6. 6. Cut the grilled bread into slices, layer with chicken, mozzarella, tomato slices, drizzle with olive oil and balsamic, and top with basil leaves.
  7. 7. Season with additional salt and pepper and serve.
