The glaze
Instructions
- Simmer balsamic vinegar in a saucepan over medium-low heat for about 8 minutes until reduced by half.
- Preheat the panini press.
- Brush one side of each slice of bread with olive oil and spread ½ tablespoon of pesto on the other side.
- On four slices of bread (oil side down), layer the chicken, tomato, mozzarella, and basil.
- Drizzle with the balsamic reduction and season with salt and pepper.
- Top with the remaining slices of bread (oil side up).
- Cook in the panini press for 3 to 5 minutes until the bread is golden brown and the cheese is melted.
