Chicken Caprese Panini Sandwich

Ingredients

The sandwich

  • 8 slices Italian bread
  • ¼ cup olive oil
  • ¼ cup pesto
  • ½ pound sliced cooked chicken
  • 8 slices tomato
  • 8 slices fresh mozzarella
  • ½ cup fresh basil leaves
  • to taste salt
  • to taste pepper

The glaze

  • ½ cup balsamic vinegar

Instructions

  1. Simmer balsamic vinegar in a saucepan over medium-low heat for about 8 minutes until reduced by half.
  2. Preheat the panini press.
  3. Brush one side of each slice of bread with olive oil and spread ½ tablespoon of pesto on the other side.
  4. On four slices of bread (oil side down), layer the chicken, tomato, mozzarella, and basil.
  5. Drizzle with the balsamic reduction and season with salt and pepper.
  6. Top with the remaining slices of bread (oil side up).
  7. Cook in the panini press for 3 to 5 minutes until the bread is golden brown and the cheese is melted.
