Strawberry Balsamic Chicken

The topping

fresh strawberries, hulled and roughly chopped

fresh mozzarella ball (or shredded mozzarella), roughly chopped

Instructions
- Preheat the oven to 400°F.
- Combine chicken breasts and ½ cup balsamic vinegar in a ziplock bag and refrigerate for at least 5 minutes.
- Place the marinated chicken in a baking dish and pour the remaining balsamic vinegar on top, seasoning with salt and pepper.
- Bake the chicken for 30 minutes or until cooked through.
- In a saucepan, bring the remaining ½ cup balsamic vinegar to a boil, then reduce heat and simmer until reduced by half.
- In a bowl, mix together strawberries, mozzarella, and basil to create the caprese topping.
- Once the chicken is done, transfer it to serving dishes, top with the strawberry caprese topping, and drizzle with reduced balsamic vinegar.
