Bruschetta Topped Balsamic Chicken

Instructions
- 1. Preheat the oven to 400°F.
- 2. Pound the chicken breasts to ensure even thickness and season with salt, pepper, and oregano.
- 3. Heat 1 ½ teaspoons of olive oil in a skillet over medium-high heat and brown the chicken for 1-2 minutes on each side.
- 4. Transfer the chicken to a baking sheet, cover with foil, and bake for 15 minutes.
- 5. While baking, combine balsamic vinegar, sugar, and salt in a saucepan, bring to a boil, then simmer until thickened.
- 6. Remove the chicken from the oven, discard excess liquid, and brush one dish of balsamic glaze onto the chicken.
- 7. Return the chicken to the oven uncovered for an additional 5-10 minutes until cooked through.
- 8. Mix tomatoes, basil, garlic, remaining olive oil, and season with salt and pepper.
- 9. Once chicken is done, brush with the second dish of balsamic glaze and top with bruschetta mixture before serving.
