Easy Balsamic Chicken

Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts
  • to taste Salt and pepper

The sauce

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic
  • 1 piece sweet onion
  • 2 cans canned diced tomatoes
  • ¼ cup balsamic vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried crushed rosemary
  • ½ teaspoon ground thyme

Instructions

  1. If using large chicken breasts, slice each into cutlets.
  2. Season the chicken with salt and pepper and brown both sides in a skillet.
  3. Remove the chicken and set aside.
  4. In the same skillet, melt butter and cook garlic and onions until softened.
  5. Add the remaining ingredients and bring to a simmer.
  6. Return the chicken to the skillet, cover, and cook until the chicken reaches 165°F.
  7. Transfer the chicken to a plate to rest and reduce the sauce until thickened.
  8. Serve the chicken with sauce over it, alongside rice, egg noodles, or mashed potatoes.
