Easy Balsamic Chicken

The sauce

canned diced tomatoes

balsamic vinegar

ground thyme
Instructions
- If using large chicken breasts, slice each into cutlets.
- Season the chicken with salt and pepper and brown both sides in a skillet.
- Remove the chicken and set aside.
- In the same skillet, melt butter and cook garlic and onions until softened.
- Add the remaining ingredients and bring to a simmer.
- Return the chicken to the skillet, cover, and cook until the chicken reaches 165°F.
- Transfer the chicken to a plate to rest and reduce the sauce until thickened.
- Serve the chicken with sauce over it, alongside rice, egg noodles, or mashed potatoes.
