Balsamic Chicken

Ingredients

The marinade

  • cup balsamic vinegar
  • ¼ cup olive oil
  • 1 Tbsp minced garlic
  • 2 tsp minced fresh rosemary
  • 2 tsp minced fresh thyme
  • 2 tsp dijon mustard
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

The chicken

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1 Tbsp chopped fresh parsley (optional)

Instructions

  1. Place chicken in a resealable bag or bowl.
  2. In a mixing bowl, whisk together the marinade ingredients.
  3. Pour the marinade over the chicken, seal the bag, and rub it over the chicken.
  4. Marinate in the fridge for 2 to 8 hours.
  5. Preheat the grill to medium-high heat (400 degrees).
  6. Remove chicken from the marinade and shake off excess.
  7. Grill the chicken covered for about 5 to 8 minutes per side, checking for doneness at 165 degrees.
  8. Garnish with parsley if desired and serve warm.
