Creamy Balsamic Sauce

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 teaspoon thyme, chopped
  • 1 teaspoon pepper flakes
  • 1-2 teaspoons Italian seasoning
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • ¾-1 cup chicken broth
  • 1 cup heavy cream
  • to taste salt and pepper
  • to garnish basil or parsley, fresh, chopped

Instructions

  1. Pound chicken breasts to 1-inch thickness and season with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat olive oil in a skillet over medium heat and brown the chicken for about 5-6 minutes until cooked through.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add butter, diced onions, garlic, thyme, and pepper flakes; sauté until soft.
  5. Add Italian seasoning, brown sugar, and balsamic vinegar; cook for 1-2 minutes.
  6. Whisk in chicken broth and scrape up browned bits; cook until liquid reduces.
  7. Reduce heat and whisk in heavy cream, stirring for about 30 seconds.
  8. Return chicken to the pan and cook for 1-2 minutes until heated through.
  9. Adjust seasoning and garnish with basil or parsley before serving.
