Hearty Quinoa Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 medium carrots, peeled and chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • ½ teaspoon ground ginger
  • ½ teaspoon ground turmeric
  • ½ cup dry red lentils
  • ½ cup dry quinoa
  • 2 teaspoons fine sea salt
  • to taste freshly ground black pepper
  • 4 cups water
  • 1 can (28 oz.) diced tomatoes, with juices
  • 2 cups chopped kale

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté the onions, carrots, and celery until softened.
  2. Add garlic, cumin, ginger, and turmeric, stirring until fragrant.
  3. Incorporate lentils, quinoa, water, salt, black pepper, and diced tomatoes, then bring to a boil.
  4. Lower the heat, cover, and let simmer until lentils and vegetables are tender.
  5. Stir in chopped kale and cook until wilted, adjusting seasoning as needed.
