Ingredients

  • cup coconut flour
  • 1 teaspoon baking powder
  • cup unsweetened almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • ¼ cup chopped pecans (optional)

Instructions

  1. 1. Combine the coconut flour, baking powder, and pecans (if using) in a large bowl.
  2. 2. In a separate bowl, whisk together the almond milk, eggs, maple syrup, and vanilla extract.
  3. 3. Add the wet mixture to the dry ingredients and gently stir until combined.
  4. 4. Heat a non-stick skillet over medium heat and coat with butter or coconut oil.
  5. 5. Scoop ¼ cup of the batter onto the skillet for each pancake.
  6. 6. Cook for 2-3 minutes until the edges puff and the bottom is golden brown, then flip and cook for another 2 minutes.
  7. 7. Repeat until all batter is used.
  8. 8. Serve with your favorite toppings.
