Coconut Flour Pancakes

Instructions
- 1. Combine the coconut flour, baking powder, and pecans (if using) in a large bowl.
- 2. In a separate bowl, whisk together the almond milk, eggs, maple syrup, and vanilla extract.
- 3. Add the wet mixture to the dry ingredients and gently stir until combined.
- 4. Heat a non-stick skillet over medium heat and coat with butter or coconut oil.
- 5. Scoop ¼ cup of the batter onto the skillet for each pancake.
- 6. Cook for 2-3 minutes until the edges puff and the bottom is golden brown, then flip and cook for another 2 minutes.
- 7. Repeat until all batter is used.
- 8. Serve with your favorite toppings.
