Instructions
- Mix the coconut flour, eggs, olive oil, maple syrup, baking powder, vanilla extract, and salt in a large bowl until smooth.
- Heat a greased skillet over medium-low heat.
- Scoop 2 tablespoons of batter into the skillet and cook until bubbles form, about 4 minutes.
- Flip the pancake and cook until golden, about 4 more minutes.
- Repeat with the remaining batter to make about 5 small pancakes.
- Serve warm with your favorite toppings.
