Ingredients

  • cup coconut flour
  • ½ teaspoon baking powder
  • 6 large egg whites
  • ½ cup milk
  • 2 tablespoons Greek yogurt or sour cream
  • 1 teaspoon vanilla extract (optional)
  • 1 drop liquid stevia (optional)

Instructions

  1. 1. Combine the dry ingredients in a large mixing bowl.
  2. 2. Add the egg whites one at a time, followed by the milk, yogurt, vanilla extract, and stevia. Mix until a thick batter forms.
  3. 3. Grease a nonstick skillet and heat over medium.
  4. 4. Spoon portions of the batter onto the skillet and cover. Cook for 3-4 minutes until edges are golden.
  5. 5. Flip the pancakes and cook for an additional 2 minutes.
  6. 6. Repeat until all batter is used, then serve immediately or allow to cool.
