Ingredients

The batter

  • cup coconut flour
  • 1 tbsp low carb sugar (optional)
  • 2 tbsp whey protein powder
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp xanthan gum
  • ¼ tsp salt

The wet ingredients

  • ½ cup sour cream
  • 3 large eggs
  • 2 tbsp light flavored oil
  • 2 tsp oil (for the pan)
  • 2 tbsp water

Instructions

  1. Whisk the first 7 dry ingredients together in a small bowl.
  2. In a medium bowl, whisk the sour cream with one egg, then add the remaining eggs, oil, and water.
  3. Combine the dry ingredients with the wet ingredients and whisk until just combined, leaving some lumps.
  4. Heat a non-stick frying pan over medium heat with 2 teaspoons of oil, wiping out excess oil with a paper towel.
  5. Ladle or spoon ¼ cup of batter into the pan, spreading it to about 3-4 inches in size.
  6. Cook for approximately 3 minutes, flipping when the edges lose their shine, then cook for another 3 minutes.
  7. Serve hot with your favorite toppings.
