Ingredients

The cake

  • ¾ cup unsalted butter
  • cups cake flour or all-purpose flour
  • teaspoons baking powder
  • 1 teaspoon kosher salt
  • cups whole-milk ricotta cheese
  • cups granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 orange zested
  • 2 tablespoons amaretto (or Cointreau or Grand Marnier)

For dusting

  • Confectioners’ sugar (optional)

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan with butter.
  2. In a bowl, mix the flour, baking powder, and salt.
  3. Cream the butter, ricotta, and sugar until fluffy, then add eggs one at a time.
  4. Mix in vanilla, orange zest, and liqueur, then gradually add the dry ingredients.
  5. Pour the batter into the prepared pan, filling it no more than ¾ full.
  6. Bake for 45 to 60 minutes until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a rack.
