Ingredients

  • 3 large eggs
  • 1 ½ cups whole-milk ricotta cheese
  • ¾ cup neutral oil
  • 2 tablespoons orange-flavored liqueur
  • 1 ½ cups granulated sugar
  • 1 teaspoon kosher salt
  • zest of 1 orange
  • 2 ½ teaspoons baking powder
  • 1 ½ cups all-purpose flour

Instructions

  1. Preheat the oven to 350ºF and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the eggs and ricotta until blended.
  3. Add the oil and liqueur, whisking until blended.
  4. Incorporate the sugar, salt, and orange zest, whisking again.
  5. Add the baking powder and whisk to combine.
  6. Fold in the flour using a spatula until no dry flour is visible.
  7. Pour the batter into the prepared pan and bake for 50 to 60 minutes, or until a toothpick comes out clean.
  8. Let the cake cool in the pan for at least 30 minutes before slicing.
