Baked Chicken and Potatoes

Ingredients

  • 1 cut-up chicken (3 to 3 ½ pounds) chicken
  • 1 pound small potatoes
  • 1 large onion
  • 2 cloves garlic
  • 2 sprigs fresh rosemary
  • 1 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 1/4 lemon
  • to taste Kosher salt
  • to taste ground pepper

Instructions

  1. Preheat the oven to 450 degrees.
  2. Arrange the chicken, potatoes, onions, garlic, and lemon in a roasting pan.
  3. Season the chicken and vegetables with rosemary, salt, and pepper.
  4. Whisk together olive oil, vinegar, and a little salt and pepper, then drizzle over the chicken and vegetables.
  5. Cook for 50 minutes or until the chicken is browned and cooked through.
