Ingredients

The cupcakes

  • 2 cups almond flour
  • ½ tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 2 large eggs
  • cup pumpkin puree
  • cup maple syrup
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • cup chocolate chips

The cream cheese frosting

  • 1 block cream cheese, softened
  • 1 tbsp softened butter
  • 1 cup powdered sugar
  • ½ tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a cupcake tin with liners, spraying them with nonstick spray.
  2. In a small bowl, mix together the almond flour, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In a large bowl, whisk together the eggs, pumpkin puree, and maple syrup, then add the coconut oil and vanilla.
  4. Combine the dry ingredients with the wet ingredients and stir until fully mixed, then fold in the chocolate chips.
  5. Scoop the batter evenly into the cupcake liners.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. While the cupcakes are baking, prepare the frosting by beating together the cream cheese and butter in a large bowl.
  8. Gradually add the powdered sugar, cinnamon, and vanilla until smooth.
  9. Once the cupcakes are cooled, frost them with the cream cheese frosting.
