Instructions
- Preheat the oven to 350°F and line a cupcake tin with liners, spraying them with nonstick spray.
- In a small bowl, mix together the almond flour, baking soda, pumpkin pie spice, cinnamon, and salt.
- In a large bowl, whisk together the eggs, pumpkin puree, and maple syrup, then add the coconut oil and vanilla.
- Combine the dry ingredients with the wet ingredients and stir until fully mixed, then fold in the chocolate chips.
- Scoop the batter evenly into the cupcake liners.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- While the cupcakes are baking, prepare the frosting by beating together the cream cheese and butter in a large bowl.
- Gradually add the powdered sugar, cinnamon, and vanilla until smooth.
- Once the cupcakes are cooled, frost them with the cream cheese frosting.
