Ingredients

The cupcakes

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • cup granulated sugar
  • cup brown sugar
  • ¼ cup canola oil
  • ¼ cup applesauce
  • 2 large eggs
  • 2 tsp vanilla
  • ¾ cup buttermilk
  • ¾ cup canned pumpkin

The frosting

  • 4 tbsp butter, softened
  • 8 oz cream cheese, softened
  • ¼ cup maple syrup
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, spices, and sugars.
  3. In a medium bowl, whisk together the oil, applesauce, eggs, vanilla, buttermilk, and pumpkin.
  4. Gently stir the liquid ingredients into the dry ingredients and pour the mixture into the prepared cupcake pan.
  5. Bake for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool the cupcakes completely on a wire rack.
  7. For the frosting, beat together the softened butter and cream cheese until smooth.
  8. Add the maple syrup and mix until combined.
  9. Gradually mix in the powdered sugar until smooth.
  10. Frost each cupcake liberally and enjoy.
