Ingredients

The cupcakes

  • cups flour
  • 1 teaspoon baking powder
  • 1 cup pumpkin purée
  • cup vegetable oil
  • 2 large eggs
  • 2 teaspoons pumpkin pie spice
  • cups sugar
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

The cream cheese frosting

  • 8 oz. cream cheese
  • 8 oz. butter
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. Whisk together flour and baking powder in one bowl.
  3. 3. In a separate bowl, whisk together the remaining wet ingredients.
  4. 4. Combine the wet and dry ingredients, mixing until just combined.
  5. 5. Prepare a muffin pan with paper liners or cooking spray.
  6. 6. Fill each cup three-quarters full with the batter.
  7. 7. Bake for 20 to 25 minutes, or until a knife comes out clean.
  8. 8. Allow cupcakes to cool completely before frosting.
  9. 9. Beat the cream cheese, butter, and vanilla until smooth.
  10. 10. Chill the frosting until ready to serve.
  11. 11. Frost the cupcakes and serve.
