Lentil Chili

Ingredients

  • 1 unit onion, chopped
  • 5 cloves garlic
  • 1 pound ground meat chorizo
  • 8 ounces dried brown lentils
  • 4 ounces dried red lentils
  • 2 units carrot, sliced in half rounds
  • 15 ounces diced tomatoes
  • 1 unit jalapeño, diced
  • teaspoons salt
  • 1 teaspoon ancho powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon smoked paprika
  • 2 teaspoons cumin
  • 2 units cinnamon sticks
  • 1 tablespoon molasses
  • 6 cups broth
  • 1 unit bell pepper, chopped
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. Sauté onion in oil for 3 minutes until softened.
  2. Add garlic and chorizo, sauté for 5 minutes.
  3. Mix in lentils, carrots, tomatoes, jalapeño, salt, ancho powder, oregano, smoked paprika, and cumin.
  4. Add broth, molasses, and cinnamon sticks; bring to a boil, then simmer for 30 minutes.
  5. Add green pepper and simmer for an additional 15 minutes.
