Ingredients

The soup base

  • 2 teaspoons butter
  • 1 medium yellow onion
  • 3 pieces carrots
  • 3 stalks celery
  • 6 cups beef broth

The main ingredients

  • 4 cups leftover cooked beef
  • 8 ounces egg noodles
  • 2 tablespoons chopped parsley
  • kosher salt
  • pepper

Instructions

  1. Heat the butter in a large stock pot over medium heat.
  2. Add the diced onion and season with salt and pepper, cooking until translucent.
  3. Add the sliced carrots and celery, cooking for an additional 3 minutes.
  4. Pour in the beef broth and bring to a simmer.
  5. Add the chunks of beef and simmer for 15 minutes until vegetables are tender.
  6. Add the egg noodles and bring to a boil, cooking according to package instructions.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Stir in the chopped parsley and serve.
