Instructions
- Heat the butter in a large stock pot over medium heat.
- Add the diced onion and season with salt and pepper, cooking until translucent.
- Add the sliced carrots and celery, cooking for an additional 3 minutes.
- Pour in the beef broth and bring to a simmer.
- Add the chunks of beef and simmer for 15 minutes until vegetables are tender.
- Add the egg noodles and bring to a boil, cooking according to package instructions.
- Taste and adjust seasoning with salt and pepper as needed.
- Stir in the chopped parsley and serve.
