Asian Noodle Salad

roasted unsalted peanuts, roughly chopped

fresh cilantro, finely chopped
The dressing

extra-virgin olive oil

rice vinegar

honey

creamy peanut butter

low-sodium soy sauce

Sriracha pepper sauce

Instructions
- Boil salted water and cook the noodles until al dente, then drain and rinse with cool water.
- In a large bowl, combine the noodles with broccoli cole slaw and grated carrots.
- Whisk together the dressing ingredients in a separate bowl.
- Pour the dressing over the noodle mixture and toss to combine.
- Add peanuts and cilantro, and toss again.
- Serve chilled or at room temperature.
