Ingredients

The vegetables

  • 3 medium zucchini

The meat sauce

  • 1 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 lb lean ground turkey
  • 1 24oz jar high-quality marinara sauce

The cheese mixture

  • 1 ½ cups whole milk cottage cheese
  • ½ cup grated parmesan cheese
  • 1 large egg
  • 1 tsp dried parsley
  • 1 tsp fine sea salt
  • ¾ cup shredded mozzarella cheese

The seasoning and garnish

  • cup fresh chopped basil
  • ¼ tsp fine sea salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
  2. Slice the zucchini thinly, sprinkle with salt, and bake for 10 minutes to remove excess moisture.
  3. In a skillet, heat olive oil and sauté garlic, then add ground turkey and cook until browned. Drain excess liquid and stir in marinara sauce.
  4. Mix drained cottage cheese, parmesan, egg, parsley, and pepper in a bowl.
  5. In a baking dish, layer meat sauce, zucchini, cottage cheese mixture, and mozzarella, repeating the layers.
  6. Finish with remaining sauce and cheese on top.
  7. Bake for 35 minutes, let it rest for 15 minutes before serving.
