Healthy Spinach and Artichoke Alfredo Pasta

Instructions
- Soak cashews in very hot water for at least 20 minutes.
- Boil salted water and cook spaghetti according to package directions.
- Place spinach in a colander and drain pasta over it to wilt, reserving ½ cup of pasta water.
- Blend soaked cashews, artichoke hearts with liquid, lemon juice, garlic powder, onion powder, salt, red pepper flakes, and pepper until smooth, adding pasta water if needed.
- Combine pasta, spinach, and sauce in a pot or bowl, tossing to mix well.
- Serve hot, topped with extra red pepper flakes if desired.
