Healthy Spinach and Artichoke Alfredo Pasta

Ingredients

The sauce

  • 1 15 oz can quartered artichoke hearts in brine
  • ½ cup raw cashews, soaked
  • 1 tbsp fresh lemon juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp fine sea salt
  • to taste freshly ground black pepper
  • pinch red pepper flakes (optional)

The pasta

  • 8.8 oz Barilla Chickpea Spaghetti
  • 5 oz baby spinach

Instructions

  1. Soak cashews in very hot water for at least 20 minutes.
  2. Boil salted water and cook spaghetti according to package directions.
  3. Place spinach in a colander and drain pasta over it to wilt, reserving ½ cup of pasta water.
  4. Blend soaked cashews, artichoke hearts with liquid, lemon juice, garlic powder, onion powder, salt, red pepper flakes, and pepper until smooth, adding pasta water if needed.
  5. Combine pasta, spinach, and sauce in a pot or bowl, tossing to mix well.
  6. Serve hot, topped with extra red pepper flakes if desired.
