Ingredients

Layer One

  • ½ cup pumpkin puree
  • 1 unit egg
  • ¼ cup coconut sugar
  • ¼ teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon Pumpkin Pie Spice
  • 2 tablespoons arrowroot flour
  • ¼ cup coconut flour

Layer Two

  • 2 cups cashews
  • ½ cup unsweetened almond milk
  • ½ cup melted coconut oil
  • 3 tablespoons honey
  • 2 units eggs
  • ¼ teaspoon sea salt
  • ½ teaspoon Pumpkin Pie Spice

Instructions

  1. Preheat the oven to 325°F.
  2. Mix all Layer One ingredients in a bowl using a handheld mixer.
  3. Line an 8x8 inch baking dish with parchment paper and press the Layer One mixture evenly across the bottom.
  4. Blend all Layer Two ingredients until smooth.
  5. Pour Layer Two over Layer One and bake for about 30 minutes until the middle is slightly set.
  6. Allow the bars to cool on the counter, then refrigerate to set completely.
