Perfect Spatchcock Chicken

The rub

avocado oil or olive oil

onion powder

garlic powder

smoked paprika

dried thyme

teaspoon
fine salt

ground cumin

black pepper
Instructions
- Preheat the grill, smoker, or oven to 375°F.
- Combine onion powder, garlic powder, smoked paprika, thyme, salt, cumin, and pepper to prepare the dry rub.
- Remove giblets from the chicken, if included, and pat the chicken dry.
- Place the chicken breast-side down on a cutting board and cut along both sides of the backbone to remove it.
- Flatten the chicken by pressing down firmly with your palms.
- Tuck the wing tips up and over themselves to secure them.
- Rub the chicken skin with oil and season with the prepared dry rub.
- Place the chicken breast side up on the grill over indirect heat and cook for 45-50 minutes until the internal temperature reaches 165°F.
- Remove the chicken from the grill and let it rest for 10 minutes before serving.
