Perfect Spatchcock Chicken

Ingredients

The chicken

  • 1 whole chicken (4 – 4 ½ pounds)

The rub

  • teaspoon avocado oil or olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ¾ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon fine salt
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the grill, smoker, or oven to 375°F.
  2. Combine onion powder, garlic powder, smoked paprika, thyme, salt, cumin, and pepper to prepare the dry rub.
  3. Remove giblets from the chicken, if included, and pat the chicken dry.
  4. Place the chicken breast-side down on a cutting board and cut along both sides of the backbone to remove it.
  5. Flatten the chicken by pressing down firmly with your palms.
  6. Tuck the wing tips up and over themselves to secure them.
  7. Rub the chicken skin with oil and season with the prepared dry rub.
  8. Place the chicken breast side up on the grill over indirect heat and cook for 45-50 minutes until the internal temperature reaches 165°F.
  9. Remove the chicken from the grill and let it rest for 10 minutes before serving.
