Ingredients

The chicken

  • 3 pounds whole chicken

The seasoning

  • 1 tablespoon lemon zest
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon ground mustard seeds
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 220°C (450°F) and lightly grease a baking sheet.
  2. In a small bowl, whisk together all the seasoning ingredients except for the chicken.
  3. Using kitchen shears, cut along one side of the chicken's spine, then repeat on the other side to remove the backbone.
  4. Flip the chicken over, flatten it out by pressing down on the breast.
  5. Pat the chicken dry with a paper towel and rub the spice mixture all over the chicken, pressing the spices under the skin.
  6. Place the chicken on the greased baking sheet and roast for 40 minutes.
  7. Let the chicken rest for 15 minutes on a cutting board before slicing and serving.
