Instructions
- Preheat the oven to 220°C (450°F) and lightly grease a baking sheet.
- In a small bowl, whisk together all the seasoning ingredients except for the chicken.
- Using kitchen shears, cut along one side of the chicken's spine, then repeat on the other side to remove the backbone.
- Flip the chicken over, flatten it out by pressing down on the breast.
- Pat the chicken dry with a paper towel and rub the spice mixture all over the chicken, pressing the spices under the skin.
- Place the chicken on the greased baking sheet and roast for 40 minutes.
- Let the chicken rest for 15 minutes on a cutting board before slicing and serving.
