Spatchcock Chicken with Garlic-Herb Butter

fresh parsley, chopped

fresh herbs of choice, chopped

garlic

shallots, chopped

lemon juice

black pepper
Instructions
- Preheat the oven to 425°F.
- Place the chicken breast-side down on a cutting board and remove the backbone using kitchen shears.
- Turn the chicken over and press down on the center of the breastbone until it cracks and lays flat.
- In a small bowl, mix the butter, parsley, herbs, garlic, shallots, lemon juice, salt, and pepper.
- Tuck the wings underneath the chicken and rub half of the butter mixture underneath the skin.
- Rub the remaining butter mixture over the top of the chicken.
- Bake the chicken for 40-45 minutes or until the internal temperature reaches 165°F.
- Remove from the oven and let it rest for at least 10 minutes before serving.
