Spatchcock Chicken with Garlic-Herb Butter

Ingredients

The chicken

  • 5 pound whole chicken

The garlic-herb butter

  • ½ cup unsalted butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh herbs of choice, chopped
  • 1 ½ teaspoons garlic
  • 2 tablespoons shallots, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Place the chicken breast-side down on a cutting board and remove the backbone using kitchen shears.
  3. Turn the chicken over and press down on the center of the breastbone until it cracks and lays flat.
  4. In a small bowl, mix the butter, parsley, herbs, garlic, shallots, lemon juice, salt, and pepper.
  5. Tuck the wings underneath the chicken and rub half of the butter mixture underneath the skin.
  6. Rub the remaining butter mixture over the top of the chicken.
  7. Bake the chicken for 40-45 minutes or until the internal temperature reaches 165°F.
  8. Remove from the oven and let it rest for at least 10 minutes before serving.
