Creamy Nourishing Vegan Broccoli Soup

Instructions
- Soak cashews in hot water for 20-30 minutes.
- Sauté onion in olive oil with a pinch of salt until softened.
- Add celery and carrots, cooking for another 5 minutes.
- Stir in garlic and broccoli, and sauté for another 5 minutes.
- Add water, salt, and pepper, bringing the mixture to a boil, then simmer for 15 minutes.
- Drain cashews and blend with 1 cup of water until smooth.
- Stir cashew mixture into the soup and puree with an immersion blender.
- Season with lemon juice, salt, and pepper to taste.
