Ingredients

The base

  • ¾ cup raw cashews, soaked
  • 2 tbsp extra virgin olive oil
  • 2 medium onions, diced
  • 2 stalks celery, chopped
  • 3 medium carrots, chopped
  • 3 large cloves garlic, minced
  • 20 oz fresh or frozen broccoli florets, chopped
  • 6 cups water or broth, divided
  • 1-2 tsp salt (to taste)
  • 2 tbsp fresh lemon juice

Optional ingredients

  • cup nutritional yeast

Instructions

  1. Soak cashews in hot water for 20-30 minutes.
  2. Sauté onion in olive oil with a pinch of salt until softened.
  3. Add celery and carrots, cooking for another 5 minutes.
  4. Stir in garlic and broccoli, and sauté for another 5 minutes.
  5. Add water, salt, and pepper, bringing the mixture to a boil, then simmer for 15 minutes.
  6. Drain cashews and blend with 1 cup of water until smooth.
  7. Stir cashew mixture into the soup and puree with an immersion blender.
  8. Season with lemon juice, salt, and pepper to taste.
