Ingredients

The filling

  • 1 jar marinated artichoke hearts, drained and finely chopped
  • 3 ounces cream cheese, softened
  • ¼ cup Parmesan cheese, freshly grated or shredded
  • ¼ cup mayonnaise
  • 2 tablespoons scallions, thinly sliced plus more for garnish

The mushrooms

  • 16 ounces large white button mushrooms, stems removed and discarded

The topping

  • 1 cup breadcrumbs
  • ½ teaspoon Italian seasoning
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or foil.
  2. In a medium bowl, mix together the artichoke hearts, cream cheese, Parmesan cheese, mayonnaise, and scallions until well combined.
  3. Place the mushrooms on the baking sheet and fill each cap with the mixture, adding extra on top.
  4. In a small bowl, combine the breadcrumbs, Italian seasoning, and olive oil, then sprinkle this mixture over the stuffed mushrooms, pressing it into the filling.
  5. Bake for 12 to 15 minutes until the breadcrumbs are golden brown and the filling is heated through. Garnish with additional scallions.
