The filling

frozen spinach

The topping

panko bread crumbs

Instructions
- Preheat the oven to 400 degrees and prepare a baking sheet.
- Drain the spinach well and place it in a mixing bowl.
- Mix the cream cheese, ½ cup of parmesan cheese, mozzarella cheese, garlic, salt, and pepper into the spinach.
- Spray the mushroom caps with olive oil cooking spray.
- Stuff the mushroom caps with the cheese filling.
- Combine the panko, remaining ¼ cup of parmesan cheese, and olive oil in a bowl, then sprinkle over the stuffed mushrooms.
- Bake for 20-24 minutes until the filling is hot and the mushrooms are softened.
