Ingredients

The mushrooms

  • 22 large cremini mushrooms or button mushrooms
  • 1 can olive oil cooking spray

The filling

  • 1 (10 - 12 oz.) bag frozen spinach
  • 8 oz. cream cheese
  • ¾ cup finely shredded parmesan cheese
  • ½ cup finely shredded mozzarella cheese
  • 1 large clove garlic
  • to taste salt
  • to taste freshly ground black pepper

The topping

  • cup panko bread crumbs
  • tsp olive oil

Instructions

  1. Preheat the oven to 400 degrees and prepare a baking sheet.
  2. Drain the spinach well and place it in a mixing bowl.
  3. Mix the cream cheese, ½ cup of parmesan cheese, mozzarella cheese, garlic, salt, and pepper into the spinach.
  4. Spray the mushroom caps with olive oil cooking spray.
  5. Stuff the mushroom caps with the cheese filling.
  6. Combine the panko, remaining ¼ cup of parmesan cheese, and olive oil in a bowl, then sprinkle over the stuffed mushrooms.
  7. Bake for 20-24 minutes until the filling is hot and the mushrooms are softened.
