French Carrot Salad

Dressing

Instructions
- Grate the carrots and place them in a medium serving bowl.
- Add chives, parsley, and optional chickpeas to the bowl.
- In a small bowl, whisk together the dressing ingredients until blended.
- Pour the dressing over the carrot mixture and stir to coat evenly.
- Allow the salad to marinate for 20 minutes before serving, tossing again before serving.
