Carrot, Chickpea and Raisin Salad

Salad

fresh cilantro leaves (chopped)

crumbled feta (optional)
Instructions
- Combine the dressing ingredients in a jar and shake until mixed.
- In a bowl, mix the carrots, chickpeas, raisins, cilantro, and almonds.
- Add the dressing to the bowl and toss everything together.
- Refrigerate for at least 30 minutes before serving.
- Top with feta just before serving, if desired.
