Ingredients

The salad

  • 10–12 ounces carrots, grated or matchstick
  • 1 tablespoon lime or orange zest
  • 1 clove garlic, finely minced
  • 1 teaspoon fresh ginger, finely minced
  • cup raisins
  • ½ cup toasted cashews
  • 3 pieces scallions
  • ½ cup cilantro or Italian parsley, chopped

The dressing

  • ¼ cup olive oil
  • 3 tablespoons fresh lime juice
  • 2 tablespoons maple syrup, honey or agave
  • ½ teaspoon salt
  • to taste pepper
  • ½ teaspoon ground turmeric
  • 1 teaspoon yellow curry powder
  • ¼ teaspoon cayenne (optional)

Instructions

  1. Combine all ingredients in a bowl and toss well.
  2. Taste and adjust salt, acid, and sweetness as needed.
  3. Refrigerate, and it will keep for up to 4 days.
