Ingredients

The salad

  • 4 cups carrots, peeled and shredded
  • 8 ounces canned pineapple tidbits
  • ¾ cup raisins

The dressing

  • 1 cup mayonnaise
  • 2 teaspoons lemon juice
  • 2 teaspoons pineapple juice
  • 1 tablespoon granulated sugar

Instructions

  1. Drain the pineapple, reserving 2 teaspoons of the juice.
  2. In a large bowl, combine the shredded carrots, pineapple, and raisins.
  3. In a small bowl, whisk together the mayonnaise, lemon juice, pineapple juice, and sugar.
  4. Pour the dressing over the carrot mixture and stir until well combined.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving.
