The dressing

avocado oil

apple cider vinegar

unpasteurized honey

grated fresh ginger root

Dijon mustard

Instructions
- Combine all salad ingredients in a large mixing bowl and set aside.
- In a small container, whisk together the dressing ingredients until well combined.
- Pour the dressing over the salad and toss well.
- Transfer the salad to a serving bowl and garnish with additional pumpkin seeds, parsley, and coconut if desired.
- Serve immediately or refrigerate for a couple of hours to allow flavors to meld.
