Ingredients

The salad

  • 4 medium carrots, grated
  • 2 tbsp raisins
  • 2 tbsp dried cranberries
  • 2 tbsp unsweetened shredded coconut
  • 2 tbsp pecans, chopped
  • 2 tbsp walnuts, chopped
  • 2 tbsp pumpkin seeds
  • 2-3 tbsp chopped parsley

The dressing

  • 1 tbsp avocado oil
  • 1 tbsp apple cider vinegar
  • 1 tsp unpasteurized honey
  • 1 tsp grated fresh ginger root
  • ½ tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Combine all salad ingredients in a large mixing bowl and set aside.
  2. In a small container, whisk together the dressing ingredients until well combined.
  3. Pour the dressing over the salad and toss well.
  4. Transfer the salad to a serving bowl and garnish with additional pumpkin seeds, parsley, and coconut if desired.
  5. Serve immediately or refrigerate for a couple of hours to allow flavors to meld.
