Curry Roasted Cauliflower

  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • ½ teaspoon salt

Naan

  • 2 pieces homemade naan

Instructions

  1. Preheat the oven for the roasted cauliflower.
  2. Chop the cauliflower into florets and toss with olive oil, curry powder, and salt.
  3. Spread the cauliflower on a baking sheet and roast until tender.
  4. In a pot, combine chickpeas, spinach, curry powder, coconut milk, diced tomatoes, and salt.
  5. Simmer the chickpea mixture until heated through and spinach is wilted.
  6. Serve the curried chickpeas with roasted cauliflower and naan.
