Ingredients

The loaf

  • 1 ¼ cup water
  • cup molasses
  • 2 cups all-purpose flour
  • ½ cup organic light brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • cup canola oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

The cranberry glaze

  • 1 ¼ cup powdered sugar
  • 3-4 tablespoons 100% cranberry juice
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare an 8x4 loaf pan.
  2. Heat water until warm and mix with molasses.
  3. In a medium bowl, combine dry ingredients: flour, brown sugar, baking soda, baking powder, and spices.
  4. Slowly add wet ingredients to dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes until a toothpick comes out clean.
  6. Let the loaf cool for 5 minutes in the pan before transferring to a rack.
  7. For the glaze, mix powdered sugar, cranberry juice, and vanilla until thick, adjusting consistency as needed.
  8. Once the loaf is cool, drizzle or spread the glaze on top.
