Vegan Gingerbread Loaf

Ingredients

The loaf

  • 2 cups all-purpose flour
  • tsp baking soda
  • ½ tsp salt
  • tbsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp allspice
  • ½ tsp nutmeg spice
  • 1 cup applesauce
  • cup vegan or regular butter, melted
  • 1 cup brown sugar
  • 2 pieces egg replacements
  • 1 tsp vanilla
  • 6 tbsp almond milk

The glaze

  • ½ cup icing sugar
  • 1-2 tsp water

Instructions

  1. Preheat the oven to 350°F and prepare a bread tin with parchment paper and cooking oil spray.
  2. In a large bowl, mix the flours, baking soda, salt, and spices.
  3. In another bowl, combine the applesauce, melted butter, brown sugar, egg replacement, vanilla, and almond milk, whisking until just combined.
  4. Combine the dry ingredients with the wet ingredients using a wooden spoon.
  5. Pour the batter into the prepared baking tin and bake for 50-55 minutes.
  6. While baking, prepare the glaze by mixing icing sugar and water until smooth.
  7. Let the loaf cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  8. Serve with vegan butter or drizzle the glaze over the loaf or individual pieces.
