Ingredients

The vegetables

  • 2 pieces sweet potatoes (white flesh, peeled and cut into cubes)
  • 2 pieces yams (orange flesh, peeled and cut into cubes)
  • 2 cups brussels sprouts (washed and cut in half)
  • 1 piece red onion (cut into big chunks)
  • 5 cloves garlic (peeled)

The seasoning

  • to taste salt
  • to taste pepper
  • to drizzle tablespoons olive oil
  • to taste fresh rosemary (finely chopped)

Instructions

  1. Preheat the oven to 400 degrees and prepare a baking sheet with foil and cooking spray.
  2. Combine the sweet potatoes, yams, brussels sprouts, onion, and garlic in a large bowl.
  3. Drizzle the vegetables with olive oil and stir to coat them evenly.
  4. Season with fresh rosemary, salt, and pepper, then stir again.
  5. Spread the vegetables on the prepared baking sheet in a single layer.
  6. Roast the vegetables in the oven for about 40-45 minutes, stirring every 15 minutes.
  7. Remove the garlic cloves before serving if desired, and serve the vegetables hot.
