Instructions
- Preheat the oven to 400 degrees and prepare a baking sheet with foil and cooking spray.
- Combine the sweet potatoes, yams, brussels sprouts, onion, and garlic in a large bowl.
- Drizzle the vegetables with olive oil and stir to coat them evenly.
- Season with fresh rosemary, salt, and pepper, then stir again.
- Spread the vegetables on the prepared baking sheet in a single layer.
- Roast the vegetables in the oven for about 40-45 minutes, stirring every 15 minutes.
- Remove the garlic cloves before serving if desired, and serve the vegetables hot.
