Easy Instant Pot Beef Stew

Ingredients

  • ½ unit onion, diced
  • 1.5 lbs ground beef
  • 2 unit delicata squash, seeds removed and cut into cubes
  • 2 unit carrots, cut into ½ inch slices
  • 3 stalks celery, cut into ½ inch slices
  • 1 jar roasted peppers, chopped (12 oz)
  • 1 can diced tomatoes (28 oz)
  • 1.5 cups beef broth
  • 2 tsp smoked paprika
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1 tsp pepper

Instructions

  1. 1. Dice the onion and set the Instant Pot to Sauté mode.
  2. 2. Add the onion and ground beef, cooking until the beef is browned, about 7-8 minutes.
  3. 3. While the beef cooks, chop the squash, carrots, celery, and roasted peppers.
  4. 4. Once the beef is browned, press the 'keep warm/cancel' button.
  5. 5. Add all remaining ingredients to the pot in the order listed and stir to mix.
  6. 6. Close the lid, seal the vent, and press the 'soup' button to cook.
  7. 7. After cooking, perform a quick release, stir the stew, and serve.
