Easy Instant Pot Beef Stew

Instructions
- 1. Dice the onion and set the Instant Pot to Sauté mode.
- 2. Add the onion and ground beef, cooking until the beef is browned, about 7-8 minutes.
- 3. While the beef cooks, chop the squash, carrots, celery, and roasted peppers.
- 4. Once the beef is browned, press the 'keep warm/cancel' button.
- 5. Add all remaining ingredients to the pot in the order listed and stir to mix.
- 6. Close the lid, seal the vent, and press the 'soup' button to cook.
- 7. After cooking, perform a quick release, stir the stew, and serve.
