Instructions
- 1. Boil a large pot of water and cook the pasta for 7-10 minutes until tender, then drain.
- 2. While the pasta cooks, prepare the (not) Sun Dried Tomato Sauce according to the provided directions.
- 3. Add the fresh spinach to the sauce and cook over low heat until wilted, about 1-2 minutes.
- 4. Drain and chop the artichoke hearts, then add them to the skillet with the sauce and spinach.
- 5. Combine the cooked pasta with the sauce, stirring until well coated.
- 6. Serve hot, optionally topped with grated parmesan.
