Ingredients

The pasta

  • 8 oz bow tie pasta
  • 3 cups fresh spinach
  • 1 13 oz can artichoke hearts
  • ΒΌ cup grated parmesan (optional)

The sauce

  • 1 recipe (not) Sun Dried Tomato Sauce

Instructions

  1. 1. Boil a large pot of water and cook the pasta for 7-10 minutes until tender, then drain.
  2. 2. While the pasta cooks, prepare the (not) Sun Dried Tomato Sauce according to the provided directions.
  3. 3. Add the fresh spinach to the sauce and cook over low heat until wilted, about 1-2 minutes.
  4. 4. Drain and chop the artichoke hearts, then add them to the skillet with the sauce and spinach.
  5. 5. Combine the cooked pasta with the sauce, stirring until well coated.
  6. 6. Serve hot, optionally topped with grated parmesan.
